"Il Cucchetto" 2005 Cabernet Sauvignon
With a limited production of 4.000 bottles, Il Cucchetto is the result of the finest selection of the farm’s Cabernet Sauvignon and Petit Verdot grapes. The must is left to macerate for ten days with frequent pump-overs to obtain the best colour and fragrance extraction. Malolactic fermentation takes place in new French oak barriques where the wine is left in contact with its lees for approx. 18 months before being blended and bottled. Further fining takes place in the bottle.
Organoleptic Characteristics:
The colour is intense with purplish glints. The fragrance is fruity, complex, with notes of spices and small ripe red fruits. The flavour reflects the same notes of the fragrance combined with softness, fullness, balance and persistence.
