The Disciplinary della of the wine production is the reference standard that regulates the production of the various types of wines that fall within a geographical indication (IGT) or a denomination of origin (DOC and DOCG). The disciplinary of the DOC Maremma Toscana provides for the denomination of origin DOC Maremma Toscana Rosso, DOC Maremma Toscana Rosato, and DOC Maremma Toscana with the mention of the vines. Also within the specification, specific types of wine are envisaged, characterized by the winemaking procedures, by the ampelographic composition, i.e. by the vines allowed for their production, and by the specific organoleptic characteristics of the wine.

The Production Area
 
is the whole province of Grosseto, the vineyards cultivated in these areas can be used to produce wines with this denomination.

The Vines which form part of the Maremma Toscana Rosato DOC wine are Sangiovese and Ciliegiolo, alone or jointly, at least 40%; red berried grapes from other vines suitable for cultivation within the Tuscany Region may contribute to the production of this wine, up to a maximum of 60%.

For the Maremma Toscana Rosato DOC wine, as for all the other types of Maremma Toscana wines, the characteristics of the wine are also expressed through Minimum Parameters Required by the Regulations such as the minimum total acidity (5.0 g/l), the alcoholic strength minimum total volume (10.50%), the composition of the vines (Sangiovese, Ciliegiolo minimum 40%, others) and the minimum dry extract (16.0 g/l).

In tasting the Organoleptic Characteristics  of the Maremma Toscana Rosato DOC include a rosé COLOR with ruby red reflections, cherry pink, claret pink; a winy, delicate Olfactory Profile with intense fruity notes; a dry or sweetish Taste, soft, harmonious, slightly acidic and fresh.

 

Our Alizée - DOC Maremma Toscana Rosato
In 2021 our company began the production of rosé wine with Alizée, a 100% Sangiovese rosé that expresses our winemaking evolution through its most traditional grape variety in our area.
Alizée, in perfect symbiosis with the homonymous wind from which its name is born, is a "temperate and regular" wine.

The Grapes and the Vineyard- Sangiovese 100%.
Harvest - The rigorously manual harvest takes place in the first week of September.
The Vinification - After the grapes are destemmed and lightly pressed, pressing in the absence of oxygen follows. The must is then cold decanted and then fermented at a controlled temperature of 15°. Aged for 7 months on noble lees, followed by refinement in the bottle.
Production - The Alizée wine is bottled in the classic Bordeaux bottle and the annual production is 5,000 bottles.
Alizée Tasting - Bright pink color, the nose shows notes of small fresh red fruit, light citrus notes. In the mouth it is fresh, sapid, of great balance with a persistent and gratifying finish. Although it is a wine often consumed in its first years of life, it maintains freshness and balance over time.
